The squash is an awkward vegetable to prepare, beingso tough and unusually-shaped, but for this soup, wrestlingwith its unwieldy ways is worth it! For a more indulgent, butless healthy option, use single cream in place of half of thelisted vegetable stock.Ingredients:1 medium butternut squash2 tbsp olive oil2 potatoes1 onion1l vegetable stockSalt and pepper to finish.Method: Chop butternut squash, onion and potatoes into cubes, ifyou like, keep the butternut squash seeds. Dry-roast them inan oven tray for around ten minutes for a tasty snack to beeaten later or as a bit of roughage for winter salads.Warm a large pot and add in olive oil. Add in onions andcook till soft.Then, add in potatoes and squash. Cook for a minute orso.Add in vegetable stock and allow to simmer for about 30minutes or until potatoes and squash are soft.Using a blender or food processor, blend the soup untilsmooth. If too thick, add a bit of water.Season with salt and pepper.Keep ithealthyJanuary can prove a bit of an anti-climax, with the backto work blues, the overindulgence of the festive seasonand bleak weather. The chilli and garlic in the recipe help to give ita kick, as well as some delicious flavours from the tuna andgarlic combining. Make sure you use good quality tuna,nobody wants flaky, wet, horrible fish in a salad that willtaste this good. Chilli is proven to help improve yourmetabolism and fish is a great and healthy alternative tomeat for you healthy eating plan.Ingredients:600g sashimi grade tuna2 Avocados4 small rice crackers4 teaspoons sesame seeds2 red chillies10ml chilli oil100g cabbage100g fish roe (optional)(for dressing)200ml lemon juice80ml vegetable oil4 tbsp grated white onion4 tsp sesame oil4 tsp white sugar1 tsp chopped garlicMethod:For the sesame dressing, combine all ingredients in a bowland simply whisk to combine.Slice the chilli very thinly and then deep fry at 160C untilcrispy. Drain on absorbent paper and season with salt. Thiswill give the salad a crispy, spicy bite. Place the tuna and avocado in a mixing bowl and drizzlewith dressing. Boil in salted water. Oncecooked, remove, strain, chill, cut into fours. Top and tail fine beans and cook inboiling salted water ensuring to cook until aldenté. Blanch tomatoes, skin, cut intoeights and deseed. Cut black olives into halves.Place eggs into cold water, bring to the boil and simmer for eight minutes. Removethe eggs from the stove and place into iced water and shell. Cut the egg into quarters.Sear the swordfish steak in a hot griddle pan. Wait until the pan starts to smokebefore placing the fish into the pan, which will achieve the griddle lines. Griddle forapproximately 2-3 minutes on each side.To make the mustard dressing, use four parts olive oil to one part balsamic vinegar,one teaspoon of English mustard, the juice of one lemon, two crushed cloves of garlicand sugar to taste.Mix the potato, cut fine beans and olives and marinate in a little of the mustarddressing. Then to serve, place a large ringmould into the middle of a charger plateand half fill the mould with the potatomix.Arrange the egg and tomato around themould.
