Here’s some ideas to combatthose colds and to lift your mood.Passion Fruit CrèmeBrulée with WalnutShortbread HeartsIngredients:500ml double cream4 large passion fruit, seeds and pulp scraped out with a spoon115g caster sugar6 large free-range egg yolksZest of 1 lemon and lime4 heaped tsp demerara sugar Fresh strawberries to garnishFor the orange and walnut shortbread:200g plain flour 150g butter 75g caster sugar 1 large egg yolk25g walnuts, chopped Zest of an orange, finely gratedA little good quality chocolate for dippingMethod:Preheat the oven to 150°C/Gas 2 and bring the cream to a simmerin a heavy pan over a medium heat. Add the grated lemon and limezest and stir to combine.Whisk together the caster sugar and all of the egg yolks in a largemixing bowl until pale, fluffy and well combined. Pour the hot creammixture over the whisked egg and sugar mixture, stirring continuouslyuntil the sugar has dissolved. Split the pulp and seeds of the passionfruit between four ramekins. Gently pour the mixture over.Place ramekins into a deep-sided roasting tin. Carefully addenough boiling water to the roasting tin to reach halfway up thesides of the ramekins. Transfer the tin to the oven and cook for 30-35 minutes, or untilthe custard has set firm, but still has a slight wobble. Remove thecrème brulées from the bain-marie and set aside to cool. Once cool, chill the crème brulées in the fridge until needed.When the crème brulées are ready to serve, sprinkle a heapedteaspoon of demerara sugar onto the surface of each. Using a chefs’blowtorch or very hot grill, heat the sugar until it melts andcaramelises, then set aside to cool. Serve with chocolate dipped freshstrawberries and the following shortbread biscuits.For the walnut and orange shortbread hearts:Heat the oven to 180c/Gas 4. Put the flour and butter in a foodprocessor and whizz until the mixture looks like breadcrumbs. Addthe sugar, egg yolks and orange zest and whizz to a dough. Tip onto a lightly floured work surface and knead in the walnuts.Wrap in plastic and chill for an hour. De-seed the peppers. Arrange peppers and whole garliccloves on a baking tray. Drizzle a little oil over and roast inthe oven for around 20 minutes. Remove and allow it tocool. Bring water and stock cube to the boil and peel thepeppers and garlic cloves, placing in a food processor withstock and lemon juice. Blend to a smooth soup; if necessary, add more water toimprove consistency. Season with salt and pepper.Crumble the bread and fry in a little oil in a frying panon medium heat. Fry the king prawns in a hot frying panfor around a minute and thread three onto each skewer.Mix cheese, bread croutons, grated lemon rind andparsley.Reheat the soup if necessary and pour into four bowls.Serve with a scampi skewer and the cheese mixture.Ratatouille with PittaBread and Cumin SpicedYoghurtServes 6Ingredients:4 tbsp Olive oil3 British Onions, sliced1 Red pepper, deseeded and sliced1 Yellow pepper, deseeded and sliced2 Small aubergines, cut into cubes3 Courgettes, sliced1⁄2tsp Coriander seeds, crushed400g tin chopped tomatoesSalt and freshly ground black pepper250ml plain yoghurt2 tsp Cumin seeds, crushed and toasted6 Pitta breads, wholemealMethod:Heat the oil in a large pan and sauté the onions and garlic gently for 10minutes until they are soft.Add the peppers, aubergine, courgettes and coriander and simmer for 20minutesAdd the tomatoes, salt and black pepper, simmer for 10 minutesMix the yoghurt and cumin seeds together.Toast the pitta bread and cut into strips.Serve the Ratatouille hot or cold with the pitta bread and yoghurt, itmakes a great BBQ starter for when the weather gets better or even a greataddition to a picnic.Tuna and Celery SouffléIngredients:185g tin tuna in oil - drained125g grated cheddar cheeseStick celery, washed and very finely chopped3 Eggs 1 tablespoon mayonnaise100ml milkSalt and white pepper to tasteMethod:Preheat the oven to 180°C/Gas 5Separate the eggs and add the egg yolksto the drained tuna and mix well.Add the celery, grated cheese,mayonnaise and milk, season and mixtogether.Lightly grease four ramekins with a little oil and then whisk the eggwhites till just standing in peaks, and then fold them into the tunamixtureBake on a tray in the oven for 20-25 minutes till risen and golden andthen serve immediately.This also works very well as a cold fish pate, to make this, simply add theeggs whole in the mixture without whisking.48-49:Layout 1 20/1/12 15:29 Page 2Next >
