Easy to make and very, very indulgent. 38-41.qxp_Layout 1 21/01/2022 14:37 Page 1Mussels, white wine and parsley Mussels are a near infamous valentines meal, but also a very nutritious food on their own. They are also cheap and sustainable compared to a lot of other seafood. You’ll need: 1kg Mussels in shells White wine 1 shallot, chopped Chopped parsley LINCOLNSHIRE TODAY 39 FOOD & DINING © stock.adobe.com/karandaev What to do: Set mussels into a bowl of cold water and clean them – make sure to discard any with chipped or damaged shells. If any mussels are open, take them out and tap the shell sharply. If they do not close, discard them as they are dead and inedible. Also clear off any barnacles and trim the “beards” which are the brown sections that often hang out the joints of the shell. Once the mussels are well cleaned, tip them into a large pan, adding a glass of white wine and chopped shallots. The pan should be no more than half full as the mussels will move around when cooking. Set pan over a high heat and cover with a lid. Shake the pan every now and then, cooking for 4 minutes. You will know when the mussels are cooked as the shells will open fully. Shells that have not opened can still be eaten safely but may need some assistance prying them apart. A blunt knife can be inserted and twisted to do this. Remove pan from the heat and sprinkle with cooked parsley. Serve in pan, or pour into a bowl to serve. 38-41.qxp_Layout 1 21/01/2022 14:37 Page 2Next >
