Use the thin slicer blade on the side ofa cheese grater to finely slice the cucumber and carrots.Alternatively very finely slice them with a knife.Place in a bowl, add the coriander, lime juice, fish sauceand sugar then mix well. Leave to marinate for at least tenminutes.Preheat the grill to high, around 180-200°. Line a grill rackwith some foil. Season the mackerel fillets on both sides,then place skin side up on the rack. Grill for six to eightminutes or until the skin is crisp and the flesh flakes easilywhen scraped with a fork. Divide the salad between fourplates, placing 2 fillets on top of each other and decorategenerously with watercress. Enjoyon a night where you needsome comfort food, butrejoice in the fact it is onlyabout 250 calories.Ingredients4 boneless lamb leg or lamb rump steaks2tsp olive oil 1 red onion, peeled and finely chopped2tsp ground cumin or garam masala400g can green or brown lentils, rinsed and drained400g can cherry or chopped tomatoesSalt and freshly milled black pepper2tbsp freshly chopped corianderMethodHeat half the oil in a large non-stick pan and cook the onions with thecumin or garam masala for 2-3 minutes, or until soft. Add the lentils and tomatoes. Season and simmer gently for 5-7 minutes,stirring occasionally. Remove from the heat and stir through the herbs.Meanwhile, heat a non-stick griddle pan, season the steaks, rub with theremaining oil and cook for 6-8 minutes on each side. Leeks are diverseand useful ingredients, their warming, mild and sometimes sweet tastemeans they can be added as one of your five portions of fruit andvegetables a day easily. The cashew nuts in this recipe can lead to goodbone strength, so make sure you eat every last morsel!Ingredients850ml semi-skimmed milk50g olive oil spread50g plain flour1 bay leaf60g grated parmesan1 tbsp olive oil3 leeks sliced3 red peppers cubed300g ricotta12 lasagne sheets50g cashew nuts, roughly choppedHalf tsp of nutmeg powder100g grated mozzarellaSalt and freshly groundblack pepperMethodPreheat the oven to 180°C /Gas Mark 4.Place the milk, olive oil spread, flour and bay leaf in a saucepan,season, and whisk together over a medium heat continually until itcomes to simmering point and has thickened. Turn the heat down toLeek, red pepper andcashew nut lasagneits lowest possible setting and allow the sauce to cook gently for 5minutes. Then, stir in 50g of parmesan, remove the pan from theheat and discard the bay leaf.Heat the olive oil in a large frying pan, add the leeks and redpeppers and cook until softened, this will take approximately fiveminutes. Transfer into a large bowl and stir in the ricotta andcashew nuts. Follow this by seasoning with black pepper and apinch of salt to taste. Assemble the lasagne by spreading one-quarter of the sauce intothe bottom of the dish, then one-third of the leek mixture andplace sheets of lasagne on top of this. Repeat the whole process,this time adding one-third of the grated mozzarella, then thelasagne sheets.
