Taking our seat in a smart, yetrelaxed dining room we scanned themenu not knowing what to choose. It’salways a great sign when everythingsounds so mouth-watering, but weeventually made our minds up, going fora couple of delicious-sounding starters. I went for an indulgent raviolo oflobster with a cognac sauce, my diningpartner opting for a brown shrimp, leekand chive risotto. The raviolo was a singlepillow of pasta containing generousportions of lobster, packed with flavour. Itmade the perfect starter for what was tofollow being soft and light but with asatisfying taste. The risotto was finishedwith crème fraiche and parmesanshavings which melted in with thecreamy risotto, giving the alreadydelicious prawns more flavour, with thechives reaching your taste buds bothat the start and at the end of everybite.For the main course, there was aunappetising experience. We’re glad tosay that as the duck was the mainelement of this dish, it remained warmand deeply tasty to the last morsel.Simple accompaniment in the form ofbuttered vegetables meant the duckremained the star here and we were gladwe had picked it, just remarkable.For dessert, we felt we had to try thehot chocolate fondant, on principle, thereare so many ways of making this dishwork and we were mightily impressedwith the Chequers’ version. Looking asgood as it tasted, the luxuriant chocolatechimed with the tangy morello cherryand the chocolate sauce provided someextra texture too. My dining partner wentfor a caramelised pear tarte tatin whichcame with a pear sorbet which was asweet and rich treat. The almost toffee-like sugary taste of the caramelised pearand the softness of the fruit meant itsimply melted in the mouth.We’ll be making a swift returnjourney to The Chequers, wesuggest you pay them a visit too!THE CHEQUERSGedney Dyke, SpaldingThe Chequers, just outside of Spalding in the rural village of Gedney Dyke is a wonderfully presentedplace, having been refurbished and reopened last May. The sea bass tasteddeliciously fresh and with the amount offlavours on the plate, it was like a sensoryexplosion. The parmesan gnocchi held adelicious earthy flavour which contrastedwell with the crisp and light nature of thefish and the pumpkin offered a sweetand soft compliment to the pleasinglysalty and peppery chorizo.The duck, served pink, as we like it,was incredible. He tells us, “IJoomla’sCaistorIngredients800g lamb leg 3cm slice of ginger 10 cloves garlic 75ml oil 2 green cardamoms Nalli Gosht (Lamb Shank) This is a rich, delicate Mughlai dish slow cooked with fragrant spices. It’s real comfort food, so enjoy!1 black cardamom 5-6 cloves Stick of cinnamon black peppercorns 2 bay leaves 3 large onions (chopped)MethodGrind ginger and garlic to a fine paste. Heat oil in a thick-bottomed pan, add green cardamoms,black cardamom, cloves, cinnamon, black peppercorns, bay leaves and onions.Sauté until onions are light brown in colour. Add ginger-garlic paste, red chilli powder and coriander and cook for one minute, then addthe lamb. Stir and cook for three minutes on medium heat. Add three cups of water and bring it to a boil. Simmer and cook, covered, untillamb pieces are almost cooked. Whisk tomato puree and yogurt together and add to the cooked lamb. Since the beginningof the year, it’s held a wedding fair and babyyoga sessions and also welcomed a host ofamateur astronomers to take part in the localcontribution to the BBC’s Stargazing Live event.In the next few weeks there are workshops onpottery and glass painting, plus a Craft Fair overthe Easter weekend.Water’s Edge also remembers local heritagewith a special display recollecting the aviationtradition. The airfields of Northern Lincolnshireplayed a vital role defending the country duringWorld War II and the display remembers a timewhen Lancasters and Spitfires were a commonsight across our skies, commemorating theirefforts.Alongside the constant stream of events andworkshops that take place at the Ropery, Bartonregularly defies any reputation it may have as asomewhat sleepy part of the country, such is thevibrancy of its cultural impact.Barton too also host its regular Farmers’Markets every month. The idea is not to copywhat’s going on in Brigg, but complement it,and help emphasise the fantastic array ofproduce available here in Lincolnshire. A furtherexample, which will no doubt prove hugelypopular, is the Beer Festival that takes place inBaysgarth Park over the weekend of 31st Mayand 1st June. Organised by Barton Lions, a hugeselection of locally sourced ales will be availableto taste.Of course this part of North Lincolnshire willtake on increased importance over the next fewyears as the area plays a major role in the hugegrowth of renewable energy, and many majorinternational companies are looking towards thispart of a world as the location for their localbusinesses.
