Using wet hands, shapeinto a patty and flatten.Heat a non-stick frying pan and spraywith cooking spray. Add the lamb pattyand cook for 5 to 7 minutes on each side,until cooked through. Leave to rest for fiveminutes.Meanwhile, make the salsa. Mixtogether the tomatoes, spring onion,olives, vinegar and parsley and thenseason. Nick says, “We want tooffer something that makes the trip to Minting worthwhile.”Nick has, however, provided a fantastic recipe from TheSebastopol for you to enjoy.FOOD & DININGLINCOLNSHIRETODAY33Forced rhubarb with gingercrumb and spice gelFor the rhubarb500g Forced Rhubarb (thin and tender)200g granulated sugar For the biscuit200g caster sugar1 eggPinch salt100g unsalted butter250g plain flour1/2tsp bicarb1/2tsp ground cloves1/2tsp ground cinnamon2tsp ground gingerFor the spice gel500g whole milk50g honey1tsp ground nutmeg1tsp ground ginger1tsp ground cinnamon5.5g agar agarFor the rhubarb mousse175g fresh rhubarb juice10g caster sugar2 sheets gelatineCut the rhubarb into 10cm sticks, and cover with sugar in anon-reactive container for 48 hours, turning over after 24 hours.Cream sugar, egg, salt and butter until well combined. Add drybiscuit ingredients.Roll into ping pong ball-sized balls and place on baking sheet,ensuring enough space for spreading. Bake at 180°c for about 12minutes. Cool on baking rack.For the gel, bring milk, honey and spices to approximately 80°c.Remove from heat and allow to infuse for 20 minutes. Using animmersion blender, disperse the agar agar into the milk. Bring milkto 85°c for two minutes to hydrate the agar agar.Pour into a container and allow to set. Once set, break up thejelly, place in a blender and blend – but try not to introduce toomany air bubbles.For the mousse, soak gelatine in cold water. Juice forced rhubarbin a juicer or blend and pass through fine sieve. Dissolve sugarinto juice. Heat half the liquid gently and dissolve softenedgelatine in it. Add this to the rest of juice. Pour into a stand mixerand whisk for 10 minutes on 3/4 speed until you get a firm butultra-light mousse.To plate, it is preferable to use a shallow bowl. Cut the rhubarbinto 1cm sections and arrange in the bottom of the bowl. Breakup the biscuits into large crumbs and arrange around therhubarb. Using a teaspoon place the gel randomly among therhubarb and biscuit.
