< Previous50 LINCOLNSHIRE TODAY FOOD & DINING Prep time: 15 min Cook time: 10 min Serves 4 You’ll need: 4-6 baby gem lettuce (halved) 2 avocados (sliced) Radishes (sliced) For vegan bacon : 2 large carrots (peeled) 1 tsp smoked paprika 1 tbsp maple syrup 2 tbsp soy sauce 1 can chickpeas (drained) 1 tbsp liquid smoke For croutons : 2 slices sourdough bread 2 tbsp olive oil 1⁄2 tsp garlic powder 1⁄2 tsp onion powder 1⁄2 tsp dried parsley For dressing: 80g raw cashews 100-150ml cold water 1 fresh lemon (juice) 1 tsp dried tarragon 2 tsp capers 1 tsp dijon mustard 1 ⁄4 tsp black pepper 2 tbsp nutritional yeast 1⁄2 tsp minced garlic Caesar salad The dressing adds gut healthy support in the way of cashews as well as some fructan with garlic. The lettuce and chickpeas provided that fibre kick to support the gut. In order to make this low FODMAP, remove the avocado and garlic and substitute for other salad items and garlic oil. What to do: Soak the cashews in boiling hot water for 15-30 mins Meanwhile, make carrot bacon by creating thin slices using a peeler (or 1mm thin slices using a mandolin). Add the wet ingredients to a bowl and thoroughly coat the carrot with the marinade. Lay out on a baking try in a single layer and cook in the oven at 180°C for 110 minutes (making sure to turn over half way through). With the remaining marinade, coat the chickpeas and also bake with the carrot bacon The croutons can be made simply but cutting the bread slices into 2cm x 2cm squares and tossing through with the olive oil and dry ingredients before baking for 5 minutes or so until crisp. For the dressing, drain the cashews and to a processor add all the remaining ingredients and blend to a fine consistency. Add more water should you require. Prepare the salad by lightly charring the gem lettuce halves on a griddle or pan for a few minutes before serving the salad with the addition of the avocado and radish. Meanwhile, melt the chocolate (microwave or in a bowl resting above a pan of simmering water). Cool the roasted nuts and break into even pieces, spread across a sheet of baking paper to form a rectangle. Pour the chocolate evenly across the nuts and sprinkle over the goji berries. Refrigerate for 30-45 minutes and serve as one large bar for people to break off pieces to feast on. While the charity was putting up ‘closed’ signs in its shops, cancelling fundraising events and planning for how it would come through the pandemic, there were projects underway that couldn’t be halted, including the construction of a new HQ, off the A15 in Bracebridge Heath. It will be the first time in its 27-year history that the charity has operated under one roof – made possible by grants allocated specifically for the build. The keys were handed over on Monday, 22 March, and the charity will move over the next few months. This coincides with the start of LNAA’s journey as a clinically independent healthcare provider which sees the organisation register with the Care Quality Commission this spring. It was another project underway before the pandemic hit and Medical Director, Dr Gareth Davies says the move will enable LNAA’s doctors and paramedics to build on their skills to deliver the best care to patients. “Where HEMS (Helicopter Emergency Medical Service) was once seen as a means to transport patients to hospital quickly, saving precious minutes, it is now a service that delivers much more,” he said. “Over the years, practices such as anaesthesia for head injury and surgery for chest injuries, have become common place in the weekly workload of LNAA. The governance of this care has historically been provided by the East Midlands Ambulance Service, however the increasing complexity of the care provided by our teams became LINCOLNSHIRE TODAY 55 LINCS & NOTTS AIR AMBULANCE The doctors and paramedics who crew the LNAA’s Ambucopter and Critical Care Cars, carry out complex procedures that would usually be seen in hospitals. Consequently, more people are turning their attentions inwards and deciding to staycation in the UK. Indeed, it’s something of a return to the late 19th and early 20th century where good old blighty was the go-to holiday haunt for hundreds of thousands of Brits. There’s a myriad of benefits that come with staycationing. Not only is it better for the environment – as fewer air miles are needed – it can also work out cheaper. At a time when modern Britain struggles to define itself, it’s also a great way to get to know the nation. After all, how many of us can honestly say they’ve seen all these isles have to offer. We’re spoiled for choice here in Lincolnshire, not only with our owns areas of outstanding beauty, cultural and heritage sights, but with those counties we share borders with. But perhaps the biggest drawer for staycations this year, is their safety. Indeed, whether you’re caravanning, travelling in a luxury motorhome or are renting a private accommodation for, say, a walking holiday, it’s easy to stick within your social bubble. Moreover, many of these examples are also self-catering so you can control exactly what you interact with and put into your body – which can be an absolute weight off the mind during this times and beyond. Of course, what constitutes rest and relaxation for one person isn’t going to the be the same for everyone. For example, the idea of hiking through the Wolds, the Yorkshire dales or the Peak District could be absolutely heaven on earth for one family, while the very thought of hiking on holiday might be hell for another. The latter case might prefer soaking up the sun on the beach all day and enjoying fine food in the evening. Or a couple might prefer to take in cultural sites and fill their time with castles, museums and places of historical importance. As of writing, holidaying inside the UK is set to be allowed from 12 April with updates shortly after on when people will be able to go abroad. Those looking at staycation cruises, for example, will need to pay particular attention to safety requirements. P&A Cruises, to name but one, has announced that holidaymakers will have to prove they have had both doses of a COVID-19 vaccine or they will not be allowed on board.
