With the onset of April, however, we can finally expect to enjoy more temperate weather, and there’s no better excuse to get out in the great outdoors for some exercise. Whatever the physical activity, be that running, weightlifting or yoga, motivation is the single biggest hurdle to overcome. It can’t be forced and conquering it often requires an inner battle. Yet as the hardest part, once that initial step has been taken, everything becomes easier. For example, once you’ve already got your kit on, warmed up and stepped outside, it’s easier to follow through and go on that planned run than to bail. So, before embarking on any exercise, make sure you first exorcise whatever might be blocking or impacting your motivation. Once that’s take care of, the next most important step is to figure out, why exactly you want to exercise. Keeping fit is a perfect reason and it doesn’t have to be anything more complicated than that. But setting a specific goal – such as increased stamina, better heart health or living long enough to see the grandkids grow up – can provide a focus that makes consistency easier. Having a goal to work towards is always a powerful motivator whatever the setting. Yet one goal we’d encourage you to set is to get out and see more of this beautiful county. One of the absolute best ways of seeing all the sights that Lincolnshire has to offer is by walking. It’s easy, inclusive and free. It can be done alone or in a group, with or without music, and for as long as you’re willing to go. Best of all, it comes with a whole boatload of health benefits – from increased heart and lung fitness, to reduced risk of stroke, as well as stronger bones, improved balance, and improved management of conditions such as high cholesterol and diabetes. By increasing your pace to a power walk or to a jog, you can up those benefits. Given Lincolnshire’s flat roads and rugged country terrain, it’s also a great place to cycle. Whether or not you stick exclusively to roads, or you fancy woodlands trails, there’s no shortage of benefits when it comes to cycling. As well as burning fat, the resistance element of cycling also means that it builds muscle, so it’s a great way to get in shape. There are plenty of amazing cycling routes across Lincolnshire, whether that’s along the River Ancholme, from Lincoln to Boston or through Bourne Woods. It’s also an ideal way to foster community with plenty of cycling clubs to check out. Yet the quintessential outdoor exercise has to be running. Let’s face it, running in the cold and dark days of winter are hard work. Many hardy souls can still be seen braving these conditions, but after so many named storms, and near unrelenting winds, you can be forgiven for wanting to stay inside. But the health benefits of running are bountiful, from strengthening muscles and bones, to improving heart health and maintaining a healthy weight. As with the other exercises that we’ve already touched on, it can also have a profound impact on mental health, lowering levels of stress, depression and anxiety thanks to the release of feel-good hormones. Like walking, running can be done on the cheap and you can do it just about anywhere. While it is perfectly fine to run in one’s own company, running is at it’s very best when you’re taking part with others. By exercising in a group, you can inspire and motivate one another – whether that’s in a group of friends, or in a local running group. But for maximum impact, there’s nothing better than marathons. These are great ways to motivate yourself, setting times you want to beat, or trying to best your previous fastest scores. However, there’s no hard and fast rules that says you have to run, and walking is absolutely welcome. It’s the participating and the completion of the route that matters. As there are regular marathons in wonderful locations across the county, it’s also a great way to discover some Lincolnshire towns you’ve not visited before. With spring upon us, we’re well and truly entering marathon season. If you’d like to take part, go and see what’s out there. Cycling, running or walking, there’s no excuse for not getting out and about in the county this spring. Trust us, you won’t regret it. With the worst of the winter weather well and truly behind us, it’s time to get active outside. Toss the CauliShoots with the oil, harissa and seasoning and spread out on a baking tray. Roast for 25 minutes, or until cooked through and golden. * In a bowl mix together the onion, spices, chilli flakes, tomato purée and 3/4 of the parsley. Add the meat and salt and stir until well combined. Set aside. * Roll out the dough to two large ovals, around 1/2cm thick, on a well-floured surface. * Divide the topping between the bases, spreading it to the edges of the dough. Transfer to baking sheets, then bake for 12 minutes until the base is blistering and the topping is cooked. * Remove from the oven, top with the CauliShoots and return to the oven for a couple of minutes to warm the CauliShoots through. * Remove from the oven, sprinkle with the pine nuts, then drizzle over the pomegranate molasses. * Serve hot, topped with the sliced cucumber, red onion, tomatoes, pickles and reserved parsley. Preheat the oven to 200 degrees 2. Start with rinsing the bulgur wheat in a sieve over the sink, then cook according to packet instructions. Cover, and leave whilst you make the rest of the dish. 3. Add the falafel to an oven tray and place in the oven to bake for 15 minutes, until golden and crisp. 4. Meanwhile prep the salad. Half the cherry tomatoes, cut the cucumber into quarters. Pick the leaves off the herbs and finely chop. Thinly slice the spring onions and bash the pomegranate to release the jewels. Set all of this aside in a large mixing bowl while you make the dressing. 5. Remove a large tbsp of the pistachios for garnish later, then add the rest to the food processor and pulse. Add the remaining ingredients and pulse again to just combine but still have texture. 6. Check the bulgur wheat is cooked and rinse under the tap to ensure its not stuck together. Then add to the mixing bowl with the other prepped salad ingredients and mix together. 7. Top the salad with the crispy falafel and either dress or serve the dressing on the side, whichever you prefer. TIP cook double grains. Bulgur wheat will last a week cooked in the fridge and then can just be reheated for a quick meal when you’re in a rush. A beautiful and vibrant 17th- century country inn, owners Simon and Becky have worked hard to cultivate a warm and welcoming atmosphere and have more than succeeded. The Red Lion has all the classics of a country pub, both on the menu and in the décor, but also has a fancy twist that gives it a unique and exciting feeling, and that’s reflected in the menu, which features everything you would expect from a fine dining out experience, the classics especially, but always a few extras that are just a little different, just a little twist to what you might expect. For starters my partner ordered the home cured citrus salmon with whiskey cream full of flavour with a delicious zing thanks to the citrus. The whiskey cream, fennel and herb oil rounded out and completed an experience both striking and complex. My own was no less exciting, with Vietnamese pork and lemongrass meatballs served on a sesame dressed rainbow salad with a sweet and sour chilli dip. Coming beautifully presented, they were meaty enough to whet the appetite but light enough to leave room for more. Though not a starter I would normally opt for or associate with starters at all, it’s certainly one I would love to try again, and perhaps see more of in the future. Given that we visited on a Sunday it would have felt remiss not to sample the Red Lion’s well-known Sunday dinner. My partner opted for the beef and pork options, while I went with the roast leg of Gelston lamb. All come served with huge Yorkshire puddings, crisp roast potatoes, vegetables and a cauliflower cheese that I simply must highlight as one of the finest I have ever sampled, a creamy masterpiece that wasn’t overpowering, but, after years of eating out across Lincolnshire, certainly took the crown. The meats, meanwhile, were succulent and tender, while the potatoes have that crispy on the outside, soft on the inside perfection that so many try and fail to achieve. It’s worth noting that the Sunday roasts can be mixed and matched as well, with beef, pork, lamb and chicken available in any combination, and even vegetarian and vegan options for those inclined. The main course was filling enough that a dessert is by no means necessary, but we opted for a forest fruits Eton mess and a Blackforest kirsch trifle respectively – light, fruity options rich and full of flavour that helped round out a fulfilling meal. There are, of course, more chocolate and toffee pudding varieties of dessert for those wishing to be a little more decadent. All in all, it’s hard not to recommend the Red Lion at Caythorpe, not only for its welcoming staff and excellent service, but for the dedication and passion put into each meal. Everything is classical, yet nothing is standard, and the twists that link the décor and menu together bring an all-round unique experience not to be found anywhere else. The charity’s first Chairman, the late John Hill, led a three-year fundraising and planning campaign to get this idea off the ground. Though times were financially tough to begin with – its helicopter sometimes grounded for months at a time – the Lincolnshire Air Ambulance became operational on April 3, 1994. Today, the Lincs and Notts Air Ambulance take on life-saving missions 365 days a year, providing critical care in medical emergencies and accidents all across the region. As a team, they are often essential to preventing loss of life at moments when, without their speedy arrival, it would be impossible to reach and treat patients in time. Since being established at Waddington, the Air Ambulance service with its iconic yellow helicopter has flown over 25,400 missions and counting, called to an average of three emergencies every day, or 1,000 every year. Little wonder this service funded entirely by public donations is at the forefront of Helicopter Emergency Medical Services in the UK. And it doesn’t just cover the Nottinghamshire and Lincolnshire areas, extending its reach to surrounding counties including South Yorkshire, Derbyshire and Northamptonshire, wherever urgent care is needed. In 2020 alone, crew responded to 1,205 calls on their dedicated ‘bat phones’. Medical emergencies such as cardiac arrests counted for 48% of those callouts, with direct response to road- traffic collisions making up 28%. Anyone can attest to accidents happening or severe illness striking at any time - of the Air Ambulance missions from last year, 1,027 were attended during the day, but 178 were at night. With these, or any number of fires, falls or farming and industrial accidents occurring around the clock, it’s crucial to have a team on hand ready to get to critical-care patients as quickly as possible. This is why the Air Ambulance has now begun a phased initiative to operate on a 24-hour basis. Gradually increasing its operational hours as part of a two-year trial, the service is pushing itself to reach more patients, wherever they are and whenever they need urgent medical attention. This step up in hours alone means pilots, doctors and paramedics alike will attend over 400 additional missions per year.
