Simon’s passion hasalways been for good food and that’sreflected on the menus in both Rothwelland Caistor.The Blacksmiths Arms in Rothwell is theperfect, quintessential Lincolnshire venue– a place packed with history and afantastic community spirit. It’s got aslightly contemporary feel but the historyof the building shines through with itsopen fires and warm and welcomingatmosphere. The Blacksmiths is a realcommunity hub with its regular eventsand its huge, and hugely popular,function room is available for partiesthroughout the year. It’s a great place toTHEBEST OFBOTH WORLDSThe Blacksmiths Arms in Rothwell and The Settlement inCaistor may be very different venues but both offer afabulous atmosphere and fantastic fooddrink as well with a strong reputation forquality ales.It’s also reflected in the food whichemphasises classic dishes, with acontemporary twist, all of the highestquality and presented brilliantly – but atvery reasonable prices. The Blacksmithstakes its role as part of the communityseriously and so regularly uses localproduce throughout the menu. Theextensive menu changes every fewmonths and there’s also a specialsboard where head chef John Wrightand his team take the opportunity tomake use of the best seasonal produceavailable. One great example of its emphasis onlocal produce comes from theBlacksmiths’ Bangers, a selection offantastic sausages, supplied by JohnPettits butchers, served as you like it(maybe classic bangers and mash, orperhaps toad in the hole?). If you wantsomething different, though, there arealways a few new ideas beingincorporated. The current spring menu,for example, offers up Sticky Indian Beef –strips of fillet tail, pan fried with onions,peppers, garlic, ginger and chilli.Just down the road in Caistor’s MarketPlace is The Settlement. It’s a fabulouslocation and it’s a popular part of thelocal community. Like the Blacksmiths it’sbased in a beautiful old building, in thiscase the old paper shop, and its historyprovides a fabulous characterful andintimate setting.The Settlement offers two distinct butequally fantastic settings. It’s likestepping out into the Mediterranean.The same menu is served on bothfloors, however, and the theme is TheGreat British Bistro. That means British-inspired fine food, made with top localproduce wherever possible, but with acontemporary twist. However the emphasis will still be on the finestfood – and of course it’ll still have its fabulous view!CREAMY GOAT’S INGREDIENTS100g goat’s cheese2tbsp yoghurt Splash of truffle oil or a small amount of black truffle paste Baby beetroot1 large carrot 1 vanilla pod1 orange Coarse polenta1 egg FlourPea shoots (to garnish)Radish (to garnish)METHODIf the goat’s cheese has rind, remove and dispose of. Blendthe goat’s cheese, yoghurt and truffle in a blender until creamyand smooth, season with a little salt and pepper, remove andchill for a couple of hours until the mix has firmed up. Roll themix into balls (about as big as a radish), roll the balls in theflour, the beaten egg and polenta and repeat the last two stepsagain so the goat’s cheese gets a nice even coating, Place backin the fridge until ready to cook.Boil the baby beetroots until they are tender, remove fromthe heat and allow to cool, then peel. In a small pan, place the peeled and chopped carrot, juice ofthe orange and half of the deseeded vanilla pod. Add a littlewater and bring to the boil. Once the carrot is soft blend untilyou are left with a silky smooth puree – it should be brightorange in colour with specks of vanilla.
