Becky has spent her career so farworking locally, and developed herexquisite skills in a local hotel,gaining first-hand experience whilstattending college. It was here thather natural talent for cooking wasnoticed and she quickly moved upthe kitchen hierarchy.Due to personal commitmentsshe unfortunately had to turndown a job offer in a prestigioushotel in London. HoweverLondon’s loss is certainlyLincolnshire’s gain and theRedwood are certainly reaping thebenefits of her staying in the area.Pan fried hake on a warm golden beetroot, pea shoot andasparagus salad with seasoned new potatoesIngredients2 fillets of hake6 new potatoes4 asparagus spears4 golden beetrootHandful of pea shootsFresh peasFor the dressing1 small tub of natural yoghurtHandful of chopped fresh dillHandful of chopped flat leaf parsleySqueeze of half a lemonCracked black pepperMethodScrub the baby beetroots and trim off theleaves, boil until tender in salted water.Simultaneously boil the potatoes in aseparate pan to avoid discolouration. Oncecooked, remove the potatoes and add thepeas to cook, this will only take about 30seconds.Fry the hake fillets skin side down in anon-stick pan until the skin is slightlyblackened and crispy. Turn the hake overand add a little butter to the pan. Add theasparagus spears to the pan and cook forapproximately three minutes. The hake is cooked when firm to the touch and the asparagus should be aldenté.Whilst the hake is finishing cooking, start the salad dressing. With over 125,000 visitors coming towatch the seventeenth RAF WaddingtonInternational Airshow there can be nodoubt that the weekend was a roaringsuccess, and yet few people realised justhow close it came to the event beingcancelled. With heavy rain on themorning of the first day, if the water hadbeen enough to stand on the runways,then no aircraft could have safely takenoff. The weather co-operated however,and just before the main gates opened,the sun came out in force to save the day.Pilots from over eighteen countries cameto the show to perform displays with over92 aircraft, from the British Red Arrows tothe Korean Black Eagles. Flying in sleek black planes withstriking patterns, the Black Eagles flewin incredibly tight formation, and werelater even awarded the Boeing Trophyfor best display 2012 by the FlyingDisplay Committee. Second place wentto the Swiss Air Force’s solo F-18 fighterdisplay team, while third was claimedby the RAF’s own Chinook team. Though the Red Arrows did nothave a chance to touch down atWaddington, many of the other pilotswere happy to walk among thecrowds, enjoying the stalls and standswhile signing autographs for excitedchildren. With the weather co-operating andthe displays running to time, visitorswere free to enjoy the variousattractions and stalls about the show,from the carnival like fun fair, throughthe various fashion stalls, down to themodel aeroplane stores for enthusiasts.Of course Lincolnshire Today had ourown stall at the show, handing out ourstylish bags for life, along with theJuly issue of the magazine.
