These types of foodscan improve cardiovascular health byreducing blood pressure, but they alsoseem to reduce feelings of effort, energyand improve oxygen cost of exercise. In two studies conducted recently byExeter University, researchers foundcyclists who drank a half-litre of beetrootjuice several hours before setting off wereable to ride up to 20% longer than thosewho drank a placebo blackcurrant juice. By examining the cyclists under ascanner that analyses how much energyis needed for a muscle to contract, it wasdiscovered beetroot juice allows cycliststo exercise using less oxygen thannormal. Cyclists also exercised at a lowerrate of perceived exertion, meaning at agiven intensity they found it lessexhausting. Though generally eating foods high innitrates such as beetroot, lettuce orspinach may be a great approach, theproblem is you never quite know howmuch nitrate is on your plate! As growingconditions, the time of year it was grownand how much time it has spent on thesupermarket or grocer’s shelf before youpurchased the vegetable all affect theamount of nitrate present. So if you wanta controlled amount, beetroot juice isyour best bet.
