The same aestheticcan be seen in the extensive menu, withold favourites given new twists whilemore modern fusions excite and dazzle.The Prawn & Crayfish Cocktail I orderedwas a perfect example. While all thetypical components of the seventiesfavourite are present – the spiky MarieRose sauce and the lemon wedge –thiswas a far cry from its progenitors. Thesprinkled smoked paprika livened up thedish, playing off the creamy sauce andpepping up the fresh, tender seafood. My partner was tempted by one of themore adventurous options with the CajunSquid, Saffron Aioli with Coriander Salsa.It’s common knowledge that squid is adevil to get right; the quality of thefinished dish, however, is a testament toDexters’ chefs. The complex kaleidoscopeof flavours were expertly balanced, withthe coriander salsa tying it altogether. The special menu lives up to itsnamesake, with some truly stand-outdishes. A shame I couldn’t have sampledthem all in a single visit. It was a hardcall, but I eventually decided on theScallop, Mussel and Salmon CreamedStew served with sourdough bread andanchovy beignet. With such asmorgasbord of seafood, I was intrigued,but I can honestly say, each element wascooked to its respective best andenrobed in the delicately flavouredbroth. The scallops were a particularhighlight as they melted in the mouth,while the sour dough helped mop upevery last morsel. Steak has long been a favourite stapleof the pub restaurant and grill, andDexters have made it a fine art. Theyhave a whole menu dedicated to itsvaried meat section (wonderfully titledThe Butcher’s Block). Neither of us hadever been confronted with such in-depthdescriptions and choice when it comes tosteaks. In the end, my partner settled onthe 10 oz rump. At first glance it lookedmuch like a million others we’ve had, buttasting it was a different matter. Themeat practically pulled apart, while thechunky chips were fluffy on the inside,crispy on the out. The refreshing sidesalad, mushroom and tomato boastedenough flavour to compete with themeat, while the punchy peppercornsauce brought out the very best of eachcomponent. Such is the ubiquity of the cheesecakethat it’s become the steak of the dessertmenu – every eatery boasts them, butfew deliver the goods. The PumpkinSpiced Bailey’s Cheesecake may as wellhave thrown out the rule book with itsseasonal twist on a classic sweet.Although I opted for the mango sorbetover the vanilla ice cream, there’s littleroom for improvement. My partner wentstraight for the greediest option with theChocolate Fondant, another dessert that’scommonplace but easy to get wrong. Itwas indulgent and perfectly gooey in themiddle, but always on the right side ofsickly. The accompanying StrawberryChantilly and Strawberry Ice Cream onlysweetened the deal. The warm ambience and excitingcombinations may have drawn us in, butthe attention to fresh ingredients,understated presentation and twists onold favourites ensured we’d be comingback; again and again.
