Mine and Rob’sbeautiful daughter Florri, whowas born in May, is now 6 months oldand is a bundle of hard work and funall rolled into one and the absolutecentre of our world.Catching up from my last article I’dlike to say that I continued to exerciseand keep CrossFitting up until the dayFlorri was born in May, but that wasnot the case. I didn’t have thesmoothest of pregnancies so on theadvice of my midwives - and with thesupport of the coaches at CrossFitWitham - we eased offexercise until I stoppedcompletely in March. Florriwas born prematurely in Mayby caesarean, but despite afew speed bumps on the road, is goingfrom strength to strength. Anyonewho’s had a caesarean knows waitingfor your body to heal and othercomplications can put everyday life onhold and this was definitely the case.Besides, getting back to work or in thegym was the least of my worries to startwith. Right through pregnancy, I alwaysthought I would just jump straightback to working out after childbirthlike all the celebrity mums you see inthe magazines. This was not the caseand I don’t regret it one bit.Spending time with my daughter,husband and puppy while adjustingto my new life came first. The bronzed turkeyis accompanied with its customary trimmings and side servings,but far from the usual fanfare, why not push the boat out withan adventurous twist or two.It’s a time when extravagance is in abundance, decadence isa must and adventure is only ever a food combination away:Mince pies with a lighter modern twist, packing all the flavours ofChristmas but with less sugar and fat.Makes: 12 Preparation time: 20 mins Cooking time: 12 – 15 minsINGREDIENTS400g shortcrust or puff pastry, depending on preference6 tbsp Streamline blackcurrant jam75g mixed dried fruit1 medium eating apple, peeled and finely grated1 egg beaten 0% fat yoghurt or orange zest to serveMETHODPre heat oven 200c/180c fan/ gas 6.Roll out the pastry and cut 12 x 8cm circles with a fluted cutter and cut out 12stars with a star cutter. Add the garlic and watercress, cook for afurther 2 mins until the watercress is wilted.Remove from the heat and tip into a large bowl, add the hazelnuts,orange zest and juice, breadcrumbs, thyme and plenty of freshlyground black pepper and a little salt to taste. Mix well. Leave untilcold.Preheat the oven to 190oC/Fan 170oC Gas Mark 5. Place the onionand lemon inside the cavity of the turkey. Spoon the stuffing into theneck flap, packing it in tightly, then secure the flap with cocktail sticks,or sew together.Roast turkey with watercress and orange stuffing The main event! The stuffing will add a fresh flavour and the turkey will be moist and perfectly cooked. Place the turkey in the centre of a foil lined roasting tray and rubthe breast and legs with the soft butter, and season with salt andpepper. Pull the foil up and around the turkey to ‘tent’ the bird,sealing it at the edges. Place in the centre of the hot oven androast for 3 hours, basting the bird halfway through cooking. Forty minutes before the end of cooking, remove from the oven,fold back the foil, baste the bird with the juices again then, roastuncovered until the turkey is a lovely golden brown.
