Its promise of Pan-Asian Cuisine with panache never fails to deliver. We pay thema visit to experience some delicious speciality dishes.Pulling into the Mint Leaf is to feel at home in many ways, once youstep through the door there’s an aroma that meets you head on thatmeans you know you are in for a fantastic meal.With modern décor and some fantastic mood lighting, meaning it’s aworld away from the tired town centre restaurants you might haveexperienced elsewhere, you are instantly transported to a different level ofdining experience.We took our seats and prepared to be wowed, with the helpful staffoffering to show us what his menu had to offer we placed ourselves in hiscare and got to experience a whole host of fantastic dishes.To start, three attractively-presented dishes arrived, an aloo chop, ajhinga jhalbaja and a Mint Leaf special sea bass. The aloo chop was abeautiful take on mashed potato, coated in breadcrumbs and served withmixed leaves and was a delicate, light dish. The jhingha jhalbaja was spicyand mouth-watering tail on tiger prawns, which was lightly spiced andpan fried with spring onions, dill weed, lime leaf, garlic and red chillies.The sea bass, shallow fried and crispy was also a delicate, yet satisfyingstarter, presented rolled with mixed leaves and spiced with mustard andmasala paste.For the main course, we were treated to another set of dishes thatexemplify why the Mint Leaf is so popular. A wonderfully-flavouredchicken shashlik, which came on skewers with onions and tomatoes, was ahearty and filling dish but remained a lightly-spiced and aromatic treat tothe last bite. A Beef Shehzani provided something we’d never tastedbefore with wedges of beef seasoned in spices, chargrilled and served withfried shallots and peppers, bringing elements of the Orient into the mix.We’d recommend ordering this as a matter of course if you visit.We were also treated to a side order of fragrant pilau rice and a spicyand rich Sag Aloo, its potato and spinach really underlining the flavours ofthe dishes they were served with.We’d urge a visit to the Mint Leaf to have a truly diverse take on spicy,exciting cooking. He has cooked for guests at a varietyof locations, having attended cateringcollege in Southampton. He says, “It’ssomething I always wanted to do withmy life, I’ve always loved cooking andI’ve been lucky enough to cook at somepretty big hotels, including Claridge’s inLondon and the Midland Hotel inManchester.”Having also been a lecturer at BostonCollege, he worked at the Sagerestaurant in Spalding where heoversaw a team of creative andenthusiastic students who served thepublic as part of their education inhospitality and management. “One of my former students there,Kevin Barber, actually works with me here now. One lad has just moved onto become our pastry chef for example.”As for the food, Philip is proud to uselocal ingredients where possible to createa fan of chefs on television, particularlyRaymond Blanc, “For me he’s still thebest, but Saturday Kitchen is a must forme, I always catch that if I’m off on aweekend, if not I’ll always watch it oncatch-up! The Great British Menu is alsogreat for ideas. You never stop learning -the day I stop learning is when to stopaltogether.”The dish Philip prepares for us is easy tocook, as he explains, “People shouldexperiment more, even I get stuck in a rutwith meals but it’s always good to trysomething new. This dish lookscomplicated, but is actually very easy toprepare and looks great on the plate.”cuisine that people travel far and wide tosample. “I try and remember both the goodand not so good meals I’ve had over theyears and use inspiration from that, alsodishes that I’ve created before oftenappear again. The clientele here wantmodern English food and we think wedeliver a great version. Our lamb,wrapped in puff pastry and spinach isparticularly popular as is our beef which isof exceptional quality.”When asked about inspiration fromwider sources, Philip reveals himself to beFillet of pork with teriyaki glaze, saffron potatoand pak choiIngredients150ml teriyaki sauce50ml sherry50g caster sugar1kg baking potato250ml double creamA pinch of saffronSalt & PepperPork tenderloin filletPak choiRapeseed OilMethodFor the glaze, place the teriyaki sauce, sherry and caster sugar into asaucepan and reduce until it becomes syrupy. Keep some of this warm, nothot and leave some behind for brushing pork.For the potato, peel and thinly slice the potato and mix with the creamand seasoning. Put saffron into a little boiling water and let it enhance, thenadd to the potato and cream. Place into a shallow baking tray and coverand bake in the oven until soft in the middle.For the pork, trim the cut, making sure there is no sinew orfat. Brush with some of the glaze and roll in cling film beforeleaving it in the fridge for an hour. When ready, unwrap andcook in oil in a frying pan, sealing the outside. Place in the ovento cook through and then slowly boil the pak choi.To plate, brush the plate with the glaze, using a clean pastrybrush. Let the pork rest for a while then slice into threemedallions. Kealey’s work is a perfect example of this,images of love hearts, keys and nature are combined in acaptivating way to create homely and welcoming images thatare created in a fascinating and almost tactile way.Reach out and touch Kealey’s work (carefully!) and you willcome across textures and indentations that add another layerto the aesthetics too. Myideas come to me when I’m not thinking of them. “I like to try and touch people with a certain sentiment withmy pieces, I want people to feel good when they look at thework, for it to be uplifting. I also love working with colour, aspart of my development I’ve looked into colour theory too soeverything flows.”Less busy is her abstract, but no less impressive or warmingwork. More elemental and open to wider interpretations, it’sjust another string to her bow.If you have a moment spare, these would be the perfect artworks to get lost in while in Lincoln.
