Of course, the regular gymattendance helped in some ways, butit wasn’t until I joined CrossFit Withamin October last year that I realised Ihad probably been doing my bodyEat clean,train dirtyCrossFit Witham member Stacy talks us through how CrossFit has changedher life and the role an 8 week Clean Eating Challenge played in kick startingher path to improved results.It wasn’t until one of themmade the passing comment“imagine how good you’d beif you ate properly” thatsuddenly I realised I neededhelp with my nutritionmore harm than good with all thecalorie free or low fat products that Ihad tried and tested.So, I needed educating. I was alreadyaddicted to CrossFit and could seesome small changes to my body in thecouple of months that followed joiningCrossFit Witham but it didn’t seemenough. I seemed to be taking toCrossFit pretty well and my coachespraised my progression. It wasn’t untilone of them made the passingcomment “imagine how good you’dbe if you ate properly” that suddenly Irealised I needed help with mynutrition.I decided to take part in The CleanEating Challenge that began in Januarythis year. Myself and nine othermembers signed up to eight weeks ofeating clean food, two extra intervaltraining sessions per week and a weeklymeeting for advice and weigh ins. I wasexcited to learn about eating properlyand was happy to be reassured thatthis wasn’t a diet necessarily buthopefully a long term lifestyle change.At its simplest, clean eating is abouteating whole foods, or “real” foods —those that are un-or minimallyprocessed, refined, and handled,making them as close to their naturalform as possible. During the first week, we tested ourbody fat, measurements, weight andsome fitness testing to compare afterthe 8 weeks. I found the first twoweeks of the challenge fairly easy, itwas new and exciting and I was reallyenjoying eating clean wholesome foodsthat I had prepared myself. Now I love creating newbreakfasts to try and I have just aboutexhausted every possible way of cookingan egg. My working life is busy andvery much so on the go, so learninghow to prepare clean lunches inadvance and making sure I had suitablesnacks throughout the day to preventmyself from eating processed food wasanother challenge. As the weeks wenton, the eating side of the challengebecame harder for me. I could see theresults, so I knew I was doing it right,but I was missing some of my favouritefoods - cake in particular. I decided toincorporate some of the foods that Iloved more regularly, also known ascheat foods, to ensure that I couldcontinue my new lifestyle even after theeight weeks were over.At the beginning of the challenge,incorporating the training with theeating clean was difficult. My body wasused to a lot more carbohydrates andsugars and I felt tired and weak duringthe first 10 days. After this I began tofeel fitter, though not necessarilystronger. The interval training early inthe mornings was exhausting butrewarding, particularly the week ourcoach took us hill sprinting up anddown Steep Hill. I was training six timesa week including two interval sessionsand it soon felt wrong to not visit thegym almost daily, my lifestyle hadFancy giving CrossFit a go? Our clean eating group alsodeveloped a very close bond; webecame the best of friends for eightweeks. The encouragement andmotivation we gave each other wasinspirational and definitely helped usmove forward as a team. We socialisedout of the gym also, including cleaneating “come dine with me” eveningsand occasional coffee shop visits afterworkouts. This is the spirit of thechallenge, knowing that you are allpushing each other through it.Eight weeks were over before I knew itand it was results time. In all honesty, Iknew I could have eaten a little better inmy last couple of weeks but I knew thatI had put in 100% to my training andhoped my results would prove this andthey did. I was over the moon with mypictures showing the results butparticularly the improvements in someof the workouts including knockingalmost 40 seconds off my 1km run timeand adding 10kg to my deadlift weight.It’s been a few weeks since thechallenge finished but I have continuedto eat clean where possible and alwaysmake healthier choices when I am out inrestaurants or socialising with friends. Idon’t miss the processed foods that Iused to consume and I am alwaysimproving in the gym. I still train up tosix times a week and I am continuouslynoticing changes in my body andgeneral health. There is no going backfor me now and I can’t wait for strongerand faster results aided by cleaner eatingin my long term lifestyle change. Buying locallycan help ensure that local businessessurvive and maintain vital jobs andservices, even though the quieter times ofthe year – and you’ve got a much greateropportunity to find out about theprovenance of the items.In Lincolnshire, our culinary traditiongoes back generations. Regular eventssuch as the Lincolnshire Sausage Festivalcontinue to highlight local produce thatpeople continue to hanker for. Then thereare items like plum bread and hasletwhich almost always appear on menusacross Lincolnshire, much loved bypeople across the county, regardless ofhow much they baffle those from outsidethe region.Many of the dining establishments thatwe visit across Lincolnshire have takentheir cue from their history and heritagewhen they’ve devised their menus. Theaim is not to simply replicate the menufrom years ago and offer the same things,but create new dishes that offer a taste ofthe past. The presentation and theconcept is often familiar but the tastesand flavour combinations are brand newand consistently surprising.They often also make use of newculinary techniques that allow them tocreate a fresh take on a familiar item.Heston Blumenthal is probably the mostfamous exponent of this but it doesn’thave to be quite as elaborate as many ofhis dishes! Instead there are experimentswith techniques such as sous videcooking, which makes use of a waterbath.
