Line alarge baking sheet with non-stick baking paper.Thinly slice the tomatoes. Lay them flat on kitchenpaper or a clean tea towel, sprinkle with salt andpepper and leave to drain.Unroll the pastry onto the baking paper and brushall over with the beaten egg. Fold over 1cm of eachedge to form a rim and pinch at the corners to seal.Prick the base here and there with a fork thensprinkle with the Parmesan cheese. Bake in theoven for 12-15 minutes until puffed up and goldenbrown.Remove the tart base from the oven and sprinklethe base with half of the mozzarella cheese.Overlap the tomatoes slices on top. The original pub dates backto the 19th century, nestled in the heartof South Ferriby were the community hasgathered for centuries. However, 2013’sinfamous tidal surge wreaked havoc onthe village and flooded the pub. Afterextensive repairs and renovations, it re-opened in March 2015 where it continuesto captivate the community. My partner and I both arrived to thedelightfully smoky scent of the Josperwith high expectations, and we were notdisappointed. I was feeling adventurousand so tucked into the beef tartareScotch egg. The accompaniments ofpickled beetroot, English mustard creamand parmesan all accelerated the deeprich flavour of the meat. My partner jumped at the hay smokedsalmon with its charred edges adding acomplex sweetness to the soft, elegantflesh. The smoky flavour profilecontrasted the celeriac and apple saladon the side. Popped black rice added anextra texture boost. For mains, we turned our attention tothe Josper which, for the uninitiated, isan indoor BBQ fuelled by charcoal whichcan reach temperatures of 400 degreesCelsius. My partner’s steak was testamentto that, with the charcoal adding oodlesof flavour. As lovely an addition thehandmade chips and onion rings were, itwas all about the meat. I was more in the mood for game andso plumped for the Thorne Moor roedeer. It was a tasty combination includinga fillet from the Josper, with another thathad been beautifully braised. As if thatwasn’t enough, it was served withcharred leeks, potato pressing and,usually, shiitake mushrooms (though inthis instance they’d been swapped outfor braised celery). Dessert was pure decadence and camewith its own wine suggestions. For me,that meant chocolate pavé which offereda delicious dish that never became toomuch. My partner went for the vanillacrème brûlée which, he assured me, wasa careful balance of vanilla and the crispmelted sugar. The room we stayed in had animmaculate attention to detail andboasted all the modern fittings includinga phone charger and a state-of-the-artcoffee machine. The breakfast thatfollowed was an utter delight. For me, itwas a chance to sample the hay smokedsalmon myself, this time with scrambledeggs. My partner went instead for ahearty full English.There are few places quite like TheHope & Anchor, from the obvious pridetaken by Executive Chef and OwnerSlawek Mikolajczyk, General ManagerAmy Heward and Reservations ManagerEmma Jehan, or the fact that customerswere hugging staff members ondeparture.
