You’ll need: * 8 lemons * 200g caster sugar * 140g raspberry * Ice * Extra lemon and raspberries for garnish if desired – or a little flag What to do: * Pare the zest from the lemons with a peeler, removing as little white pith as possible – cut away any pith you can from the strips. * Juice the lemons and mix the juice, zest, sugar and raspberries with 1.2 litres of boiling water. * Let cool, then sieve, pressing through juice with the back of a spoon. Add sugar to taste and chill in jugs. Pork Pies FOOD & DINING You’ll need: * Butter* 600g shortcrust pastry, bought or homemade * Flour* 85g dried white breadcrumb * 200g smoked bacon lardon* 400g good quality sausages (about 6) * 1 egg, beaten with a fork* few pinches sesame seeds * 1/4 tsp each ground mace, ground pepper and dried sage What to do: * Heat oven to 200°C/180°C fan/gas 6. Line each hole of a 12-hole muffin tin with a thin strip of baking parchment across the middle that’s long enough so the ends stick out a centimetre or two – use a dab of butter to stick in place. * Roll out two thirds of the pastry on a lightly floured surface and stamp out small circles of roughly 12cm x 12 cm. Press a circle into each hole in the tin to line and form the base and sides of the pie. You may need to cut off any excess later, but better more to be safe now than to realise you haven’t made enough later. * Sprinkle 1 tsp of breadcrumbs into the base of each pie. Tip the rest of the crumbs into a mixing bowl. Squeeze in the sausage meat, discarding the skins, along with the bacon lardon, pepper, sage and just a little bit of salt. * Mix thoroughly with your hands until the breadcrumbs have disappeared, then divide the mixture between the holes, packing in firmly and shaping to a dome in the middle. * Roll out the remaining pastry and stamp out 12 x 7cm circles. Brush with a little egg and add a top to each pie, egg-side down to stick, carefully pressing pastry edges together to seal. Brush with more egg (don’t throw away leftovers) and sprinkle with sesame seeds. * Bake for 30 mins until golden then carefully remove the pies from the tin, using the parchment ends to help you lift them out. Sit on a parchment lined baking tray, brush round the sides with more egg and put back in the oven for 8 mins. * Leave to cool and enjoy. These are available from sugar craft shops. Other brands are available but supermarket colours do not give the same depth of colour. * Icing bags, greaseproof or plastic, No.2 piping tips. What to do: * Heat the oven to 190°C/170 fan/gas 5 All Butter Shortbread Jubilee Biscuits FOOD & DINING * Beat butter and sugar together until smooth (can be done in a food processor) * Stir in the flour to get a smooth paste. * Turn on to a work surface and knead together. Gently roll out until 1cm/1/2” thick * Cut out with cutters (we use a gingerbread man for the grenadier guard), place on a baking tray and chill in the fridge for 20 minutes (stops them spreading in oven and loosing shape) * Bake in oven for 15/20 minutes until pale golden brown. Leave to cool. Icing: * Mix the box of ROYAL ICING sugar with water as instructed or put all ingredients for royal icing in a mixer and beat well. * Divide the icing into amounts to colour. Add more water so that when the spoon is lifted out of the icing the trail will disappear in the count of 10. This means it is the correct consistency (quite runny) Add the colours. * If you are icing the guardsman put the face colour in a bag and ice the face and hands. Use just a touch of red to make a skin colour. Put it under a lamp to dry. Do the same for the red and black leaving a bit of time between each colour. We leave ours under an anglepoise lamp but you can put them under the lights under your kitchen cupboards. * Leave to dry and enjoy! When the success and wellbeing of a family is directly tied to a business, decisions are made that prioritise long-term success. We all want something to hand down to our children and be proud of. Compare this to larger companies and CEO culture especially, where the priority is instead on generating fast profit as soon as possible to benefit shareholders and then departing for a new job, and you can see why people feel more trust in family- owned firms. It’s not uncommon for a Managing Director of a family company to stay there for decades, creating a real sense of legacy and trust. They won’t be trying to earn a quick buck and run away with it, and that means customers can trust those businesses to act in a way that benefits such long-term goals. This means they are more likely to take care of customers, more likely to work hard to satisfy them, and quicker to respond if there are any issues or complaints. For the family business, ownership of the company is not a short-term thing, but a long-term family investment, and their work ethic reflects that fact. This ethic also passes down to employees, who report heightened levels of job security and positive feelings associated with working for family businesses. There are many reasons why this might be, but one of the most quoted is that they feel that family businesses better understand that employees are real people and not just statistics or numbers on a report sent to their office. Being able to sympathise and empathise with employees leads to managers more understanding of chances in circumstances, especially those surrounding family matters, and while this doesn’t always prevent difficult decisions having to be made, it’s far less common to see scandals surrounding large layoffs or unscrupulous practices involving family firms than large nationals.
