Taking a digestive vacation inthe form of a juice fast allows you topartake in two caveman ideals,consuming nutrient rich whole foods(about 80% vegetable and 20% fruit)and replicating the abstinence fromdigestion by removing the fibre. However while the fad diet cloudlooms overhead threatening to rain downon the health parade maybe its best toleave juice fasting alone at the risk ofdamaging the reputation of apredominantly plant based diet. Maybein sleep we find all the digestive rest weneed, but maybe that’s for another time!52 LINCOLNSHIRETODAYhealth and thereforesustained weight loss.Having experienced the effects ofa juice fast, I can say first hand that thedetoxifying effects are pretty remarkable.Without going into much detail it’sincredible how much ‘output’ there isconsidering the input. Even on the fifthand final day of my fast I was still passingsolids, very much contradicting my liquidintake. It seems clear that three meals aday for 28 years has created somewhat ofa digestive tailback. In the same way, if a machine isoverworked without maintenance, westart to see dysfunction occur andperhaps we are seeing analogy paralleledwith modern digestive issues such asheartburn, acid reflux and IBS. All thispotential aside, I think that one of the keylimiting factors to the success and appealof a future fast is that although the lackof digestive stress was clearly welcome,the increase in stress due to fatigue wasnot. HEALTH & FITNESSWhile I neverreally felt hungrymentally, physically Iwas drained. As apersonal trainer my job is pretty activeand unfortunately while impossible totruly say, the stress I felt due to my lackof fuel led to me developing a minorleague case of the sniffles, the very thingI was hoping to bolster my immunesystem against! Perhaps with stress beingcumulative in the body the good the fastwas doing was perhaps undone by thedemands of a logistically and physicallychallenging job?To conclude, I think that although ajuice fast is a fantastic way to reboot thesystem and chance for many to go coldturkey from bad habits and build newhealthy ones it seems that 24 hourdigestive stress is a necessary evil toaccommodate the 24 hour stress ofmodern living. I think we should beencouraging people to cook and to eatproperly, kids are taught that putting a £1 pizzain the oven is enough and it really isn’t.“You can grow potatoes in a bucket in thegarden, or tomatoes in hanging baskets, onceyou taste that sweetness you’ll wonder why youever bought from supermarkets.”Simon’s passion for fresh ingredients meansFOOD & DININGTorbay Sole filled with baby spinach leavesServes 2IngredientsTorbay soles x 2Langoustines x2 (optional)Flat leaf parsleyButterVegetables for roasting (peppers, red onions, spring onions, baby carrots, cherrytomatoes or whatever there is to hand)Lime (for zesting and flavour)MethodPeel and chop your chosen vegetables, but don’t discard the ends or peelings asyou’ll need those for later, place them to one side.Place vegetables in pre-heated oven at 160C for around twenty minutes with alight drizzling of olive oil.While the vegetables are roasting, place peelings and ends in a deep, non-stickfrying pan. Having asked your fishmonger to fillet the sole for you, place flat on asurface and season with salt and pepper.Add spinach leaves to the fish and roll tightly, securing with a skewer or cocktailsticks if needed. Pour 200ml of white wine over the fish and wrap in foil. Let it simmer over thepeelings for around 10-12 minutes. Add lime juice and zest, leaving the husks in thepan for added infused flavour.Add langoustines to the fish if adding them to the recipe at this point, cook themwhole. Remove roasted vegetables from oven and place on serving dish after transferringjuices to your fish pan. Add more wine and gradually add a knob of butter beforereducing the sauce by half.Serve by creating a bed of vegetables and placing the fish on top. Sieve the sauceover the fish and garnish with flat leaf parsley.This is perfect for a dinner party as it can be prepared in advance or sitting in thegarden with a glass of Chardonnay. he sources all his produce from local marketsand you can really taste that in his food.
