To make the guacamole, add the avocado and lemon juice to a blender or foodprocessor along with a pinch of salt and pepper. Blend until smooth, then stir in thecoriander and red onion. Taste and adjust seasoning if necessary. 2. Use a small, sharp knife to cut grave stone shapes from the tortilla wraps. Whynot be as creative as you like and try cutting out some ghosts or trees as well!3. Place a large frying pan on a medium-high heat and add the vegetable oil.After a few minutes, check the temperature of the oil by dropping in a small piece oftortilla wrap. If the wrap sinks to the bottom, the oil is not hot enough. Once the oilis the correct temperature, the tortilla should stay on the surface and create bubbles.4. Add a few tortilla shapes at a time to the oil, frying for less than a minute oneach side or until golden. Drain the shapes on kitchen towel and allow to cool.5. Once the shapes have cooled, take a large ceramic oven dish and spread theguacamole evenly over the base. Scatter over the watercress to represent grass,then place the gravestones and other shapes in any way you like. 6. From the forthcomingstarters was a smoked duck dish withblack pudding and a crispy poached egg.For me, the latter was the standout, withthe crunchy exterior adding a hithertountapped dimension to the humblepoached egg. The second starter was the most avantgarde of the evening. Typically, pannacotta is thought of as dessert, but here itwas reimaged as savoury. Honey andmustard, to be precise. Served on slate, itwas accompanied with beetroot, candiedwalnuts and, most excitingly, balsamicballs that burst in the mouth in anexplosion of sweet-tangy flavour. Anunusual and daring dish, one that willsurely go down a storm with diners. The third was an old favourite. There’slittle that can be done to reinvent theprawn cocktail. At least that’s what wethought going in. The harmonious MarieRose sauce and fresh plump prawns weresumptuous in their own right, but at thebase of the dish was a tomato gel,adding a sweet, zesty tang. This one willbecome an instant favourite, and an idealaccompaniment to an afternoon tipple. Duck made a return for our first mainwith the pan fried breast with roastedcarrot, carrot puree, dauphinoise potatoand a robust red wine jus. The dish wasan exercise in perfection, with the meatpink and succulent, and the carrot incontrast with the gamey flavour. For me,though, the highlight was the potatoes. Atouch of garlic and a parmesan toppingmade these the best dauphinoise I’ve hadthe pleasure of eating. The second main course, and by farand away my favourite, was the porkwellington. The loin was wrapped in blackpudding to keep it moist and encased inthe richest, flakiest shortcrust pastryimaginable. The sage and onion puree onthe side was a revelation, while the ciderjus provided the sweetness pork craves. For the third main, we were treated toa pan fried salmon fillet with a crabcroquet, a mussel, a lightly curried creamand parsley oil. It was everything I’d wantfrom a fish dish and more. The croquetteand gloriously crispy salmon skinprovided a dose oftexture while the lightsauces took a step backfor the seafood to speakfor itself. Proof that we doindeed have a secondstomach for dessert, thefirst of our sweet duo was brought outand I was in rapture. A salted caramel tartwith pistachio ice cream already ticked allthe right boxes, but the taste was off thescale. While salted caramel so often fails todeliver, this was rich, sweet and, mostimportantly, salty. It come through as anafter taste on each bite and enhanced thechocolate and caramel flavours. The second dessert, and a fitting end toour banquet, was a raspberry andleminchello semifreddo served with aflourish of raspberry coulis and kirschsoaked cherries. Each room, be itthe lounge area with its open fireplace, theOak Room and its twinkling cosmic-effectceiling, or the well-stocked bar, Harry’s. We were seated in an intimate diningroom, ideal for a family or socialgatherings. The gilded picture frames,ceiling beams and silverwaresimultaneously induced an image ofurbane country dining and regalsplendour. It was appropriate, given thevenue offers a ‘Downton at the Dower’. The seafood platter on slate was my firstintroduction to the food craftsmanshipand quality at the Dower. And what anintroduction. Though the delicate smokedsalmon and sweet plump prawns wereboth without fault, the whitebait was thestar of the show. Crispy and moreish, itwas all I could do not to order anotherround. The tangy, paprika-spikedmayonnaise on the side really was thefinishing touch. My partner was presented with analtogether more rustic dish. Bubble andsqueak is one of those dishes born out ofnecessity and has subsequently beenelevated to culinary greatness. Although itoffered the comfy homeliness one expectsof this dish, it was deceptively light. Theorbiting pancetta added a brackish touch,while the poached egg on top broughteverything together, enrobed in rich yolk. The seafood platter was followed byTournedos Rossini, an exquisite Frenchsteak dish that the Dower’s chefs havemastered. Fillet steak is perhaps the bestbeef cut, and here it was served rare,wrapped in crispy prosciutto and toppedwith an umami-intense mushroom sauce.Beneath the steak was a pâté crouton thatwas gamey and rich. A taste of allcomponents was one of the most intricateand delicious forkfuls I’ve had all year. Seafood followed for my partner, withred mullet in a tarragon sauce. Simplyput, the fish was cooked perfectly,preserving its meatiness whilst alsobringing out the delicate texture. Its tasteevoked the ocean, amplified by thepancetta, lemon and red currents. The Dower House Hotel has all three in abundance, with theEdwardian building nestled in the southern edge of the Wolds. intensified. Dessert was a trio ofchocolate puds. Herewe had profiteroles anda brownie. Both were delicious, indulgenteven. But the clear winner was the pontneuf, with its layers of brownie, darkchocolate mousse and a chocolatehazelnut base. My partner’s dessert was adeparture, with an elegant whitechocolate and lime cheesecake on aginger base. It was a grown-up taste,complex and shifting. The spice of theginger built up a gentle warmth witheach bite, and the lime brought outuntapped dimensions of the chocolate. The Dower is licensed for marriagesand civil ceremonies and with its beautifulgrounds and facilities, delightful staff andsuperb food, there are few places in thecounty better suited for that special day.
